This was a special occasion meal that Mummy used to make. Give each stage time to come together.

Make it yours

  • Use half a can of crushed tomatoes in place of two fresh tomatoes.
  • The potato is optional; boil it partway instead of frying if preferred.

Directions – STEP 1: (ahead of time)

    Combine Part: A in pot

  2. 02

    Bring to a boil over high heat

  3. 03

    Simmer over medium-low heat for 20 minutes

    Set aside, do not drain, this will become your base.

Directions – STEP 2: (ahead of time)

    Cube potato (from part C above)

  2. 02

    Over medium-low heat, deep fry

  3. 03

    (you can skip this step if you don’t want potato)

    Boil your potato until they are ½ cooked, but still firm

Directions – STEP 3: (ahead of time)

    Combine Part: C in a blender

  2. 02

    Blend until smooth

    Set aside

    Pre-heat oven to 350

  2. 02

    Heat 2 tablespoons of oil over medium-high heat

  3. 03

    Sauté curry leaves, cloves, pepper corns, cinnamon until their perfume has been released

    Add mixture from step 3

  5. 05

    Let the tomatoes and spices cook for 5 minutes, constantly stirring

  6. 06

    Add tomato paste and cook for 5 more minutes

    once curry base reaches thick consistency

    Combine curry into pot with stock/meat from step 1

    Bring to a boil over high heat and add coriander and fried onions

    Let the mixture merry together over medium heat (15 min)

    Cover pot and place in oven at 350 for 30 minutes

    Uncover, stir, add fresh coriander for garnish, and enjoy!
